Why do ebooks have less pages than regular books?

If the font is hard to read, one can speed up reading with an e-book by adjusting the font. Page size can matter, I suspect I read faster with a bigger page size (my iPad is bigger than most of my dead-tree books, which is bigger than my phone). I got in the habit of looking stuff up while reading. With a dead tree book beside my bed, that means I get up, go into the other room, and look it up on my computer.
